GLUTEN

Gluten is a vegetable protein produce, high in nutrition and quite tasty when seasoned properly. It is the heart of the wheat kernel. It can be used in the place of meat. I have used gluten for various recipes including spaghetti, lasagna, etc. It is excellent even re-heated and if properly prepared is hard to tell it is not hamburger.

By hand - 4 cups flour (wheat)

1 ½ cups lukewarm water Make a stiff dough, form into a ball, knead well, and pound about 10 mins. to work up a good gluten.

Mixer - 7 cups cool water 14 cups whole wheat flour

Mix for 8 - 10 minutes.

Let stand under cool water for a few minutes. Wash out starch by kneading with the hands under water, being careful to keep the dough in a strainer and holder under tap running tepid water until most of the starch is washed out. Press excess water out, and spread out on greased cookie sheet. Bake 350 for 30-35 minutes or until tough is leathery. May add beef base before baking.

Note: The bran that is drained off can be cooked on a cookie sheet and eaten as bran flakes. The starchy water can be used to water plants.

BASIC BEEF FLAVORING

2 T. beef base granules
1 T. soy sauce
½ C chopped onion
4 tsp seasoned salt
½ tsp MSG
1/4 T. pepper

Mix all ingredients and bring to a boil. Add gluten strips and simmer 30 min.

BASIC GLUTEN FLAVORING

7 C water
½ C soy sauce
1 can consomme soup (or substitute 12 beef bouillon cubes)
Bring water to boil, reduce heat, then add soup and soy sauce. Roll out gluten, cut into ½"
strips with sharp knife or heavy scissors. Drop strips into broth. Simmer 30 minutes.

GLUTEN FOR STEW

Season raw gluten with beef soup base. Spread out on cookie sheet and bake 350 until tough and leathery - about 1 hour. Cut with scissors into cubes and add to vegetable stew. Allow to simmer gently. Add beef base to stew and add 2-3 tablespoons oil.

BASIC GLUTEN STEAKETTES

Form gluten into steak-shaped forms and season with basic beef flavoring.

PAN FRIED STEAKETTES

Basic gluten Steakettes
1 C sliced mushrooms
½ C butter (margarine)
salt and pepper to taste

Fry steakettes in butter. Reduce heat to low. Sprinkle mushrooms over steakettes, cover with lid for 5 minutes. Serve immediately.
