Pumpkin Cake

The following recipe can be used for Halloween or Thanksgiving. You can decorate it for Halloween or frost it with a cream cheese frosting for Thanksgiving. It is a moist and delicious pumpkin cake. You can cook it in a bundt pan for variation

PUMPKIN CAKE

5 eggs, beaten
3 C. pumpkin
1 tsp. salt
1 tsp. cloves
1 ½ C. sugar
2 cans evaporated milk
1 box yellow cake mix
½ C. butter, softened

Mix the beaten eggs, pumpkin, salt, cloves, sugar and evaporated milk together well. Pour into 9X12′ pan, sprayed with Pam. Mix butter into cake mix to crumble. Spread on top of pumpkin mixture. Bake at 350 for 60 minutes. Serve with Cool Whip or Whipped Cream on top.

Easy and Delicious Popcorn Balls

2 cups brown sugar
1 cup butter
1 cup Karo Syrup

Boil 6 minutes

Add 1 can sweetened condensed milk

Boil 2 more minutes.

Pour over large bowl of popcorn. (½ cup uncooked popcorn popped in an air popcorn popper)

Moist Sugar Cookie Recipe for the Holiday

This sugar cookie recipe is my families favorite. My daughters and daughter-in-laws make it for their families on a regular basis. It is a plump and moist cookie. It would be great to use for cutting out various shapes and frosting for Halloween, Thanksgiving, Christmas, other holidays and various family occasions such as baby showers.

Cream together:
1 cup margarine
2 cups sugar
2 eggs
1 cup sour cream
1 tsp. vanilla

Add the following in order:
½ tsp. salt
½ tsp. baking soda
4 tsps. Baking powder
4 ½ cups flour

The dough will be very sticky. Flour surface. Roll and add flour to roller and cookie dough until right consistency. You do not want it too sticky but, you do not want too add to much flour or it will make the dough dry.

Frosting:
½ cups margarine
3 cups powdered sugar
1 ½ tsp. vanilla
2 tsp. milk
Add food coloring if desired.

Scrumptious Pumpkin Roll

3 eggs
1 C. sugar
2/3 C. canned pumpkin
1 tsp. lemon juice
3/4 C. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
½ tsp. nutmeg
½ tsp. salt
1 C. finely chopped walnuts, if desired
FILLING:
1 C. powdered sugar
6 oz. cream cheese
4 T. butter
½ tsp. vanilla

Beat eggs on high for 5 minutes.  Very gradually, beat in sugar.  Stir in pumpkin and lemon juice.  In a separate bowl, stir together the six dry ingredients.  Fold into the pumpkin mixture.  Spread into a 15X10 inch pan that has been lined with greased and floured wax paper.  Top with the chopped walnuts.  Bake at 375 for 15 minutes.  Turn out onto a flour sack dish towel that has been sprinkled with powdered sugar.  Pull off the wax paper.  Roll up and let cool.  When cool, unroll and spread filling to within ½” of the edges.  Re-roll, without the towel, and chill.
FILLING: Mix all the filling ingredients together.

This delicious pumpkin roll would be great to serve when entertaining guests in your warm family room next to a new enticing fireplace.
