Chocolate Cheesecake Recipe

Cheesecake:
24 oz. cream cheese (softened)
3/4 C sugar
6 oz simisweet chocolate (6 1 oz squares)
2 oz unsweetened chocolate (2 1 oz squares)
1 tsp. vanilla
3 eggs

Crust:
1 pkg chocolate graham cracker (16 crackers)
1 T sugar
1/3 C butter (melted)

Grind crackers in a food processor with sugar. Slowly add butter & churn well. Press into a 9″ spring form pan & bake at 350 for 10 minutes. Chill well. Increase oven to 450. Melt chocolate in double boiler. Set aside. Combine cream cheese, sugar & vanilla in an electric mixer. Blend well. Add eggs separately. Then blend in melted chocolate. Pour into crust & return to oven 10 minutes. Reduce temperature to 250 and bake an additional 45 minutes. Chill well before serving.

Raspberry Cheesecake Bars

Crust
1 1/4 C flour
½ C brown sugar
½ C ground almonds
½ C butter
dash of salt

Filling
2 pkgs cream cheese (8 oz.)
2/3 C sugar
2 eggs
½ tsp almond extract
1 C seedless raspberry preserves
1/4 C sliced almonds (optional)

Combine crust ingredients in food processor for 30 seconds. Reserve 3/4 cup for topping and press remaining into a 9X13 ungreased pan and bake at 350 for 15 minutes.

Blend cheese and sugar well. Add eggs and extract and spread over hot crust. Return to oven 15 minutes. Spread preserves evenly over hot bars. Sprinkle remaining crust mix (and sliced almonds if using) over top and return to oven for 15 minutes.

Fluffy White Dinner Rolls

This easy bread recipe can also be used as a bread machine recipe.

Mix: together and put in a warm place:
1/4 cup lukewarm water
1 pinch brown sugar
2 teaspoons yeast

Mix together and microwave the following ingredients for 2 minutes.
1 cup milk
½ cube butter
Add to milk and butter after microwaving (let cool first):
½ cup sugar
1 teaspoon baking powder
After the mixture cools to warm temperature add:
1 egg (you do not want the egg to cook)
Mix well

Add the yeast mixture to the milk mixture. Gently mix together.

Add slowly 4 cups flour. You want you the dough to be more sticky. This will make your rolls light and fluffy. If you do need to add more flour you can add 1 large spoonful more.

Either knead by hand or put in a bread maker and put setting on dough. If you knead by hand, put dough in a bowl and cover with a dish towel. Keep warm so dough can rise-double in size. Then proceed to roll into balls and let rise again double in size.

If you have used your machine, after the dough is finished rising, roll in to 12-16 balls (depending how large you want your rolls) and place on a greased pan to rise to double in size once again. This will take about l hr and 15 mins. (Cover rolls with a dish towel to keep dough warm)

Bake at 325 for 30 mins. After taking out of oven, coat top of rolls with butter to hold in moisture.

Kentucky Derby Pie

½ cup butter
1 cup sugar
2 eggs, beaten
½ cup flour
1 pinch salt
1 teaspoon vanilla
1 cup chopped pecans
1 cup chocolate chips
1 (9 inch) pie crust, partially baked

Preheat oven to 350. Cream butter and sugar. Add beaten eggs, flour salt, and vanilla. Add chocolate chips and nuts. Stir well. Pour into partially baked pie shell. Bake for 30 minutes or until set.
