Colorful Food Dish-Lemon Basil Beans

Ladies, your family will absolutely love this side dish of beans. This is also great as a main dish if you are dieting and trying to cut down. It is light and has all the qualities of a whole meal with the bacon as protein. Have a glass of fruit juice with it and you have the perfect meal. (great for a barbecue)

1/3 C fresh basil (chopped)

1/2 lemon (zest or juice)

1 T olive oil

1 clove garlic (minced)

2 tsp dijon mustard

1/2 tsp sugar

1/2 tsp salt and pepper

l large tomato (diced)

1/3 C. bacon bits (fresh)

4 C fresh green beans

Combine first 7 ingredients in a bowl. Set aside. Steam beans for 8-10 minutes. Place in a serving bowl and toss beans with tomatoes and dressing. Sprinkle with bacon & serve. Preparation time: 15 minutes

Pork Burgers Your Family Will Love

This delicious Curry Pork Burger is topped off with a Spicy Ketchup. This is another recipe I got out of Diabetes Focus.

It was created by Sunny Anderson, super chef from the Food Network program. Also great for the summer grill.

BURGERS

2 1/2 lbs ground pork /2 large cloves garlic, finely chipped

2 tsp ground coriander /freshly ground pepper

2 tsp curry powder /2 T olive oil

2 tsp Worcestershire sauce /6 hamburger buns

1 tsp cayenne pepper /1 head butter lettuce

3 scallions, chopped /2 - 3 tomatoes, sliced

SPICY KETCHUP

1 clove garlic, minced /1/2 tsp red pepper flakes

1 T butter /1/4 tsp cayenne pepper

1 cup ketchup /1 scallion, finely chopped

For SPICY KETCHUP:

In a saucepan over medium heat, lightly saute garlic in butter, about 2 minutes. Add ketchup, red pepper flakes and cayenne pepper. Cook an additional 5 minutes.

Remove from heat and stir in scallions. Cool before serving.

For BURGERS:

In a large bowl, using your hands, mix pork, coriander, curry powder, Worcestershire, cayenne, scallions and garlic. Season with pepper.

Make 6 even patties and put in refrigerator until ready to cook. Heat a large fry pan over medium-high heat; add oil. Sear patties until golden brown on both sides and cooked through, about 5 minutes per side. Cook in batches, if necessary.

Serve on hamburger bun with lettuce leaf, sliced tomato and spicy ketchup.

Hamburgers For The Grill, Yum!

I found this recipe in the Diabetes Focus magazine. It is a great recipe for everyone. A must try.

Tailgate Burger’s by Mario Batali (The Food Network)

1 1/2 lbs ground chuck

1/4 cup chopped scallions

2 chipotle chilies in adobo sauce, finely chopped

4 oz can diced jalapeno chiles

4 oz can diced green chilies, drained

1 T chil powder

4 hamburger buns or 8 slices of white bread

4 slices pepper jack cheese (optional)

Salsa picante or prepared salsa for serving with the burger

Combine the meat, scallions, chipotle and jalapeno chiles, diced green chiles and chili powder in a large bowl. Shape the mixture into 4 patties about 3/4 inch thick and 4 inches across.

Grill them over high heat for 4 minutes. Flip. For medium-rare, cook about 4 minutes more; 5 minutes more for medium.

Transfer each burger to a bun; top with cheese if you like. Serve with salsa. (If you leave the cheese off, you’ll eliminate 80 calories and 7 grams of fat per serving.

Summer Fun For Kids

Recently my family got together for dinner. While the adults were busy in conversation, my grandchildren were playing dress up in the bedroom. I had laid out some of Aaron’s Online Boutique dress up clothes for my granddaughters and grandson to play with. They were entertained all evening and had a wonderful time together.

My 2 year old granddaughter came to me and stood in front of me to show how pretty she looked in her Snow White costume. The two 3 year olds girls kept telling me they were “Princesses’ in their Sleeping Beauty and Rapunzel costumes.

With armor on and sword in hand, my grandson played the knight in shining armor. At one point the sword ended up in my granddaughters hand which she found entertaining as well. (don’t worry, it is perfectly harmless)

With seven grandchildren in a small area, we definitely appreciated the fact they had so much fun with the dress up clothes. It was for a fun night for everyone.
