Colorful Food Dish-Lemon Basil Beans
Friday, June 19th, 2009Ladies, your family will absolutely love this side dish of beans. This is also great as a main dish if you are dieting and trying to cut down. It is light and has all the qualities of a whole meal with the bacon as protein. Have a glass of fruit juice with it and you have the perfect meal. (great for a barbecue)
1/3 C fresh basil (chopped)
1/2 lemon (zest or juice)
1 T olive oil
1 clove garlic (minced)
2 tsp dijon mustard
1/2 tsp sugar
1/2 tsp salt and pepper
l large tomato (diced)
1/3 C. bacon bits (fresh)
4 C fresh green beans
Combine first 7 ingredients in a bowl. Set aside. Steam beans for 8-10 minutes. Place in a serving bowl and toss beans with tomatoes and dressing. Sprinkle with bacon & serve. Preparation time: 15 minutes
